Zucchini and Sweet Potato Bread for Stable Glucose Readings

It’s vital to eat healthy, no matter whether people have health problems or not. However, because of the fast pace of life, we seem to eat anything that’s fast to prepare, and that’s within reach.

But, most people don’t know that they can still have something fast and healthy. Yes, this is possible. Below there is a recipe for zucchini and sweet potato bread which is healthy and at the same time delicious.

This bread is ideal for making in bulk, freezing, and also reheating for each meal. As a matter of fact, this bread is perfect for one’s blood glucose levels and does not lead to spikes. Read on to find out more.

Recipe for Grated Sweet Potato and Zucchini Bread

Necessary Ingredients:

  • Dried rosemary – 1 tablespoon;
  • One finely chopped brown onion;
  • Two crushed garlic cloves;
  • Baking soda – 1 teaspoon;
  • Grated zucchini – 450 grams or around 2 cups;
  • Peeled and grated sweet potato – 250 grams or approximately 1 cup;
  • Cracked black pepper and sea salt;
  • Almond meal – 150 grams or one cup;
  • Cherry tomatoes;
  • Five lightly beaten eggs;
  • Organic cheese or nutritional yeast – ¼ cup.

Other Ingredients (Optional):

  • Baby spinach – one cup;
  • Frozen peas – 1 ½ cups;
  • Pesto – 1 tablespoon.

How to Make It

First, preheat the oven to 200°C or 400°F and take a baking dish, and line it with parchment paper.

Those who have a food processor should use it to whip up the recipe quickly with the help of the grater blade and grate garlic, sweet potato, onion, and zucchini.

In a big bowl mix sweet potato, organic cheese or nutritional yeast, zucchini, rosemary, pepper, salt, and almonds. Mix well all ingredients, then add the 5 eggs and mix once more.

Take the obtained mixture and spread it evenly on a baking tin. Take the cherry tomatoes, cut them in half, and top the mixture.

Bake for 40 to 50 minutes. However, bear in mind that the baking time depends on the dish. The bread is ready when we can insert a skewer and the skewer comes out clean.
