How to Make Delicious Blue Cheese, Date and Walnut Ball

Diet plays a significant role when it comes to diabetes management. But we should not feel as we are deprived of certain things and foods.

As a matter of fact, there are some great recipes specially made for those with diabetes that are fun, delicious, and easy.

Such a recipe is the one that we are going to present today. In this recipe, there are walnuts and dates included, and both things are very beneficial for the proper management of the condition.

Walnuts come with many health benefits such as combating damaging free radicals and improving the function of the blood vessels. According to a recent study, walnuts might help improve total cholesterol.

On the other hand, dates are brown, plain, and a little sticky. However, they come with a great amount of fiber, in fact around seven dates contain four grams of fiber. This makes them a diabetes-friendly snack.

Also, another great thing about dates is the fact that they are abundant in antioxidants. Below people will learn how to prepare this snack which can be served with veggies, crackers, and bread.

Walnut, Blue Cheese, and Date Ball

Necessary Ingredients:

  • Finely chopped walnuts – 2 ½ tablespoons;
  • Crumbled blue cheese – 4 ounces around 1 cup;
  • Nonfat buttermilk – 1 tablespoon;
  • Softened fat-free cream cheese – 5 ounces;
  • Fresh flat-leaf parsley minces – ¼ cup;
  • Less fat cream cheese – 3 ounces 1/3;
  • Minced pitted dates – 2-3 dates;
  • Minced shallots – 1 tablespoon;
  • Grated lemon rind – ½ teaspoon;
  • Kosher salt – ¼ teaspoon;
  • Black pepper – ¼ teaspoon.

How to Prepare It:

The first thing is to add all ingredients to a mixer and beat at medium speed. Beat until the mixture is creamy and smooth.

With a tablespoon take from the cheese mixture and put it on a big sheet of plastic wrap. With the help of a rubber spatula form a ball. Wrap the ball in plastic wrap and leave it like that overnight.

Then, in a shallow dish combine walnuts and parsley. Unwrap the ball and roll it in the this and coat it well. The next thing to do is to put the ball on a serving plate; keep it in the fridge before serving or serve it right away.
