How to Make Delicious, Herb-Roasted Carrots

What does a crowded Thanksgiving table need? A breather like a simple side of beautifully roasted carrots. They are easy to cook and still look elegant in combination with fresh cilantro and parsley. Sweet but slightly firm, they fit every table, and not just the one for Thanksgiving. But, why are carrots good choices for those with diabetes? Carrots are a non-starchy vegetable, high in vitamins and minerals. This means they provide vital nutrients, while at the same time preventing blood sugar spikes. They contain high levels of vitamin A, B, C, K, beta-carotene, folate, and magnesium. Another reason why they are a good choice for those with diabetes is that their high beta-carotene and vitamin A content helps prevent long-term eye damage linked to the condition. Herb-Roasted Carrots Recipe

Time for Preparation - 35 minutes
Serves 6 (serving size - half a cup)

Needed Ingredients:

  • 1 1/2 pounds peeled carrots, cut diagonally into 2-inch pieces
  • 1/4 cup of olive oil
  • 3 tbsp. of fresh cilantro, chopped and divided
  • 2 tbsp. of chopped fresh thyme
  • 1/2 tsp. of kosher salt
  • 3 tbsp. of fresh flat-leaf parsley, chopped and divided
  • 1/2 tsp. of black pepper

How to Prepare

The first step in the preparation of the perfectly roasted carrots is preheating the oven to 400 degrees F (200 degrees C). Then, put the carrots in a large bowl and add the thyme, oil, half the cilantro, half the parsley, salt, and pepper. Mix well, and toss to coat. Next, line a rimmed baking sheet with foil, and arrange the carrot mix. Bake for around 25 minutes, until the carrots become lightly browned and tender. Don’t forget to stir them after 15 minutes.  Finally, sprinkle with the rest of the cilantro and parsley. Enjoy!
