Needed Ingredients:
- 1 1/2 pounds peeled carrots, cut diagonally into 2-inch pieces
- 1/4 cup of olive oil
- 3 tbsp. of fresh cilantro, chopped and divided
- 2 tbsp. of chopped fresh thyme
- 1/2 tsp. of kosher salt
- 3 tbsp. of fresh flat-leaf parsley, chopped and divided
- 1/2 tsp. of black pepper
How to Prepare
The first step in the preparation of the perfectly roasted carrots is preheating the oven to 400 degrees F (200 degrees C). Then, put the carrots in a large bowl and add the thyme, oil, half the cilantro, half the parsley, salt, and pepper. Mix well, and toss to coat. Next, line a rimmed baking sheet with foil, and arrange the carrot mix. Bake for around 25 minutes, until the carrots become lightly browned and tender. Don’t forget to stir them after 15 minutes. Finally, sprinkle with the rest of the cilantro and parsley. Enjoy!
