Cinnamon Bun Recipe
Time for preparation – 45 minutes Makes 12 cinnamon bunsIngredients for the Dough
- 3 tablespoons of psyllium husk powder
- 1 ½ cups of almond meal
- 1 teaspoon of baking powder
- Half a tablespoon of cinnamon
- Half a teaspoon of salt
- 1/8 teaspoon of stevia
- 1 cup of water
- 1/8 cup of coconut oil
Ingredients for the Filling
- 1/4 cup of cinnamon
- 1 cup of almond butter
- Half a teaspoon of salt
- Half a teaspoon of stevia
Ingredients for the Icing
- 1 1/2 tablespoon of coconut oil
- 1/8 teaspoon of stevia
- Half a teaspoon of cinnamon
- 1/4 teaspoon of salt
Instructions
Mix the ingredients for the dough for about 15 minutes, until firm. Then, combine the ingredients for the filling in another bowl, mix, and store it in the fridge. Make rectangle shape from the dough, by first rolling it into a ball and then flattening it. Place it on parchment paper, and cover with plastic wrap. Next, roll out the dough gently, and as thin as you can with a rolling pin. Make sure you maintain its rectangular shape without breaking. Remove the plastic wrap once you finish rolling it. Melt the coconut oil at room temperature, and brush a thin layer of it onto the flattened dough. Now, drop the filling onto it using a fork to spread it evenly. Make sure you leave 2,5” empty at the top (the furthest end from you). Next, use your fingers to curl bottom edge, rolling it while pulling the parchment paper away from you. When you finish rolling it, rotate the dough using the parchment paper, making sure the seam is at the bottom. Prepare a muffin tin and 12 cupcake holders. The next step is cutting the rolled dough into 12 pieces, and for that, you can use a dental floss. Put each piece into a cupcake holder, and bake for around 25 minutes in a preheated oven at 375 F. Mix the ingredients for the icing and drizzle it over each cooked cinnamon bun. Enjoy them while still warm.
