Here are the ingredients that we will need to prepare this amazing dish. Don't forget, that we can always double the ingredients if we want to increase the size of our portion.Ingredients:
- 1/2 teaspoon chili powder;
- 2 large sweet potatoes;
- 1/8 teaspoon salt;
- 2 teaspoons canola oil.
- 1 tablespoon lime juice;
- 1/2 teaspoon honey;
- 3/4 cup plain low-fat Greek yogurt;
- Pinch of salt;
- 1 teaspoon grated lime zest;
- 1/2 – 1 teaspoon minced canned chipotle peppers in adobo sauce;
- 1/8 teaspoon ground cumin.
Instructions:
Before starting with the dish, make sure to preheat the oven to 400ºF. Get a baking pan and cover the base with a baking sheet. Make sure to apply oil on it or use a cooking spray. After the pan is ready, peel the sweet potatoes and wash them. So, now it is time to cut them. First, halve them lengthwise. Cut every half lengthwise into four pieces. Place all the pieces in a large bowl and start seasoning them. Sprinkle some oil, salt, and chili powder. Make sure to get all the ingredients mixed up with the potatoes to coat them evenly. After that, place the seasoned potatoes upside down on the sheet and bake them for 20 minutes or until they turn brown. Turn the potatoes to the other side and let them cook for another 8 minutes so that they can brown evenly on all sides. While the potatoes are in the oven, it is time to make the sauce. Put all the ingredients mentioned above and mix them well together. Add as much or as little salt as preferred. After the potatoes are thoroughly baked, serve them on a plate with the sauce.
